Any PC or Mac capable of running a web browser is sufficient. If your PC's are really old, they can be replaced with low cost "thin" terminals that have no moving parts, no configuaration and are perfect for industrial environments.
A session is defined as a single connection to VirtualOffice. Generally, each user will require a session. You are allowed to have a ratio of up to 2 user accounts defined per session. EG: You have need 12 individual user accounts, but only 6 people will ever login at once, so 6 sessions is all that is needed to be purchased.
